A step ahead - Baking pull apart rolls



A step at a time. Now learning the sense of this common saying. After all not so long ago I was even scared to switch on the mighty oven that came with my electric cooker in Dubai.
Well in India baking is surely not as common as it in west, so making breads is definitely not on our kitchen list. Nevertheless having tried my hand at some good cakes and cookies, it's time to enter the dreaded bread area. And I did that by taking the baby step by making this easy pull apart rolls. By the way did I mention this was my first hand acquaintance with Mr. Yeast as well. 


I knew that there was a message for me when I was coming across lovely rolls at Cooking and me and at Purple Foodie , amongst others. And so I had no choice but to open my new pack of instant yeast and see it wonders unfold. The best part was seeing the look on my hubby's face when he asked me if I made it from scratch.













Garlic Pull Apart Rolls

Ingredients: 




For Rolls: Makes 8

All Purpose Flour - 1.5 cups 


Warm Water- 1/2 cup 
Instant Yeast - 1/2 tbsp
Salt - 1tsp 
Sugar - 1 tbsp 
Olive Oil - 1 tbsp + 1 tsp


Sesame seeds - 1/2 tbsp for sprinkling on top




For Spread:

(This is basically a personal choice, so just make your own kind of spread - little more pepper, less salt, thyme...whatever)

Unsalted butter, at room temperature - 6 tbsp
Minced garlic - 2 tbsp
Chopped coriander leaves - 2 tbsp

Chopped parsley - 1 tbsp
Salt as per taste
Chilly flakes - 1/2 tbsp
Oregano -3/4 tbsp

Crushed Pepper - As per taste




Method:


  • Mix flour, yeast, warm water, salt and sugar in medium bowl to get a smooth, sticky dough. I used hand mixer at medium speed. 

  • Dip your fingertips in oil and add to the dough by kneading slightly. Keep repeating this process till all the oil vanishes. You should get a good elasticity in dough after this step i.e the dough springs back when you press with your fingers 

  • Cover the bowl with cling film and keep it a warm place for an hour or more, till it doubles up

  • Meanwhile, make the spread by mixing all the ingredients in another bowl

  • Grease a loaf pan or any other rectangular tin and set aside

  • Now when the dough has risen, knead it slightly to knock out the air

  • Divide the dough into two equal portions. Dust the work surface with flour and now start rolling the first portion of the dough into a rectangular sheet of 1/2' thickness

  • Spread about 2 tbsp of garlic spread on one side. And roll from one end gently and firmly

  • Cut this roll into 4 equal parts and stiffen the shape slightly. Place the rolls with the cut side up in the greased pan 

  • Repeat the same procedure for the remaining dough. Sprinkle the sesame seeds on top of the rolls. Let it rest for 20-25 mins, while you pre heat the oven at 350F

  • Place them in the oven and bake for 25-30 mins till the top is golden colored

Take out and let it cool for 5-10 mins, while you make masala chai to enjoy your evening tea time.
