Classic Coffee Cake for Great Friends





You remember in my last post I was telling how in India festivals are celebrated at the drop of a hat. Following suit, I've started baking cakes. Any reason, any excuse, no reason, simply bake a cake. So there would be friends get together cake, son's lunch box cake, Boss's dinner dessert cake, I miss home cake, I'm getting bored cake, I love my husband cake, surprise cake, what's new cake and God's knows what not cake. Thankfully this one had an occasion.  


So when my friends and bloggers Anita and Hasina planned a meet at my place, within seconds my mind  was conjuring the image of cake that I would be serving. After all it's no secret that good friends and good food go hand in hand. So if three girls are meeting, then it got to have a sweet treat! (Girls?? Yes my ego doesn't accept any other age reference. And I got to keep massaging it). But then if you know me, you would also know that the definition of good starts at taste and ends at simplicity. Anything not simple and tasty doesn't enter my kitchen very often.








This cake is an absolute classic from King Arthur Flour's recipe with buttery cake and cinnamon sugar & nuts topping. Absolutely delightful. And so easy to make too. Perfect for those times when your best friend calls to say that she's around & will hop over in 20 mins. Great, simply make the mix in 10 mins. Pop it in the oven and then grab your make up kit. And while you transform to welcome your friend, the cake is already half way through. Let her settle down, while you remove the cake from the oven and let it cool for while, so that its ready to dig in while going though all the shopping bags. Yes it's that easy!!





















Streusel Coffee Cake Recipe


Recipe Source King Arthur Flour. This is half of the original recipe.


Ingredients:
For Streusel/ Topping

  • 1/4 cup sugar

  • 1/2 tsp cinnamon (Or more if you like it more)

  • 1/4 cup chopped walnuts/ mixed nuts (I used walnuts, cashews and silverd almonds) 

  • 1/2 tsp vanilla 





For Cake:
  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 4 tbsp unsalted butter, softened

  • 1/2 cup sugar

  • 1 large eggs

  • 1/2 cup sour yogurt/ sour cream/ plain yogurt 

  • 1/4 tsp vanilla extract




    Method: 
    1. Preheat oven to 350 degrees. Mix all ingredients of topping in a bowl and set aside. 

    2. Butter and flour a 6 inch spring foam pan/ regular round pan and keep it aside. 

    3. Whisk the flour, baking powder, baking soda and salt in a bowl and set aside. 

    4. Now beat butter, sugar and egg in a large bowl with a hand mixer till smooth. Add 1/3rd flour mixture, followed by 1/2 of yogurt. Repeat the process, ending with flour mixture, mixing it after every addition, till just combined.  Mix in vanilla.

    5. Spoon half of the batter into prepared pan. Sprinkle with 1/2 of the topping. Cover with rest of cake batter and sprinkling of rest of topping. 

    6. Bake for 20-25 mins or till until tester comes clean. Transfer to a wire rack; let cool for 10 minutes. Remove from pan and serve.
