Choco Vanilla cupcake to please all
I think the world can be easily divided into two clear cut groups. The vanilla lover and the chocolate lover. See how easy to classify someone. But what to do when the wife is a chocolate lover, husband is on the vanilla side and the kid wants some strawberries too. Simple you blend it all in a single cupcake!
Nowadays whenever my son sees me browsing blogs and magazines, he invariably gets excited by seeing all the colorful pics. Specially if they are of cakes and cupcakes. I guess cakes and cupcakes really have that dreamy quality about them that makes all kids (and elders) fall for it.
This time I finally relented to bake a small batch (only 6) cupcakes. Easier to do portion control. So when I made the batter of vanilla cupcakes, which my husband prefers, I couldn't help but sneak in some chopped chocolate as well. Just to please my tastebuds too!!
But imagine my dismay when the baking was done, and I offered them to my son and he refused to accept them. According to the three year old, they aren't cupcakes. After asking why he thought so, he happily guided me with his culinary knowledge by showing the magazines with lovely frostings and toppings. So what can the poor mama do, but whip a quick frosting from whipping cream and make a real "cupcake" with strawberry topping!! But what surprised me that this time I too loved the frosting, which is rare. Guess because it had very less sugar and was quite light as well. That made everyone happy!
Vanilla Chocolate Cupcake Recipe:
(Makes 6 large or 12 mini cupcakes)
Ingredients:
1 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup sugar
90 gms butter, softened
1 tsp vanilla
Method:
- Fold in the chocolate/nuts and spoon the batter in the prepared muffin trays.
- Bake the cupcakes for 15-17 mins, or till done. Take it out and let it cool completely, before frosting.
Whipping Cream Vanilla Frosting
Ingredients:
1 cup whipping cream/ heavy cream
1 tbsp sugar
1 tsp vanilla
Method:
- Stir all the ingredients in a cool bowl. Cover and keep in the fridge for 30 mins. (I use hand mixer with paddle attachment and chilled the attachments as well)
- Now whip the mixture till thick and peaks form (about 3-5 mins)
