Pain of shifting eased with hazelnut brownies







By now, I could easily add "pack-move-unpack" as part of my skill set in my resume. After all, for last 12-13 years, I have shifted house almost every year or maybe even more. Sometimes across country, across cities and sometimes even across the colony. So creating a new home in a vacant apartment is one challenge I'm quite pro at.





Thankfully this time we shifted within Bahrain itself and that too within 5-6 kms. So the whole process was little less gigantic. But unfortunately that doesn't take away the pain of shifting. With empty cartons staring helplessly of what heavy misfortune they would be laden with, one is always left with bewilderment of how I ever managed to gather so many unnecessary and unused stuff. And then with a heavy heart, some of the clutter is discarded to create a lighter heart, but not necessarily a lighter box! 









So with boxes of memories and utilities, we again move to a new space to try and fit it all. Once again the kitchen looks too small, and storage seems scarce. And once again the charm and anxiety of of a new surrounding weighs in equal measure. And at this moment of crazy shifting and nerves, all one needs is a sweet bite to restore all the energy. Thankfully I had the foresight to carry a box of these heavenly hazelnut brownies to the new house to do the magic trick..A slice or two and we were back to unpacking in no time!












Hazelnut Brownie Recipe





Method:




  1. Preheat oven at 180C/350F. Grease and line an 8" square baking tray.

  2. In a bowl, add 3/4 cup melted butter + 1 tsp vanilla + 1 cup sugar and stir to combine. Then add 3 eggs and stir well after each addition. 

  3. In a separate bowl, sift 3/4 cup flour + 3/4 cup cocoa powder + 1/2 tsp baking powder.

  4. Now slowly add the dry ingredients to the wet ingredients in 2 batches and combine well.

  5. Finally fold in, 3/4 cup toasted and coarsely chopped hazelnuts + 3/4 chopped bittersweet chocolate

  6. Pour this batter in the greased pan and bake in the pre-heated oven for about 25 mins, or till the tester comes clean from the centre of the brownies.

  7. Remove from oven and let it cool, before cutting into squares.

  8. Enjoy warm with vanilla ice cream or a slice on its own.
