Kuch meetha ho jaye - Choco Chips and Walnut Blondies








The true joy of a sweet moment calls for sharing, the happiness of it can only be relished when shared with all your loved ones. So however delayed this post may be, but it surely is a heartfelt one. To invite each one of you to be part of my moment of joy, the start of another beautiful journey.










Yes, it was the lovely addition of a baby girl, to complete my family :). My little princess entered the world on 10th of July and we aptly named her - VANYA, meaning "gift of god". Now you all know the reason for my absence from the blog and the social network for all this while. The little on along with older sibling - Aarul were enough to keep me busy night and day.











And now when she's happy to explore the world around, I knew this much delayed post should be up and front. So here am I sharing my happiness and excitement with a sweet bite. After all, as per Indian tradition, such news is always incomplete without a sweet - So, "much meetha ho jaye"?










Blondies are close cousin of brownies. The only difference being that it has more butterscotch flavor than chocolatey, because of brown sugar. But this Martha Stewart recipes bridges even that gap, with the liberal usage of choco chips and walnuts for the added crunch. They are super fast to whip when you just need to have something sweet. But of course, you won't settle for just one. 












Now before my darling wakes up, let me share the recipe of this delicious sweet bar with you all.





Blondies with choco chips and walnuts


Minimally adapted from Martha Stewart, to suit my preference for less sweetness.





Makes 16 


Ingredients: 


All purpose Flour  - 1 cup


Light brown sugar - 1/2 cup


White sugar - 1/4 cup


Melted butter - 8 tbsp (unsalted)


Egg - 1


Salt - 1 tsp


Vanilla - 1/2 tsp


Choco chips - 3/4 cup


Chopped walnuts - 1/2 cup





Recipe:




  1. Preheat oven to 180 C/350 F. Grease and line a square baking tray with parchment and keep it aside.

  2. In a bowl, whisk melted butter and both the sugars. Now add egg and vanilla, and whisk together till smooth.

  3. Now fold the flour and salt, very lightly so that it just gets moist. Do not over mix.

  4. Finally fold 1/2 of the choco chips and nuts. And pour the batter in the tray. sprinkle  rest of the choco chips and nuts on the top.

  5. Bake the blondes for 40-45 mins, or till the centre is done. Cool for about 10 mins before cutting in 16 squares.
