Some days can only be celebrated with chocolate - Chocolate Fudge cake with ganache















“If there's no chocolate in Heaven, I'm not going.” 










I'm sure a world without chocolate is no fun, its a world where fairy tales are not read, where Santa Claus doesn't visit, its a world where raindrops are not welcome...so its a not a world where I want to be. After all a life without chocolate would be so sweet less...so blah! And yes while we all need some spice in life, its a alice of a yummy chocolate cake that we celebrate life with!
















Though I'm a chocoholic in capital letter, yet I don't really have a sweet tooth. Quite an oxymoron, right? Strange but true..in fact its my son, who's inherited the sweet tooth. And I'm forever fighting hard to make him switch to the savory side. But then only if parenthood was that easy...sigh. In fact, he would have his way he would eat through his life with a jar of nutella...which surely is not what any mommy wants.









So with the ambitious hope that my little baby doesn't develop such a strong affinity with the sugar laden treats, I've been charting my own plans. Like introducing her virgin tastebuds to raw, unprocessed food and to develop her taste for natural flavors. So in last one month she's got her fair share of veggies, fruits and cereals. Let's see how far this momma's aim flourishes.







But then when she turned 6 months old and it was time to get into a party mood, then the reluctant mom had to give in. After all celebration had to be complete with a cake, chocolate and some glitter. Pastel marshmallows also joined in to add some kiddy look, along with glitter hearts. Very cheesy, yet cute too...don't you think so?










Every time I run out of time for creating a masterpiece from my cake.....(which is every time, since I've yet to graduate to that level), I dig into my pantry to adorn my cake and make it look at least pleasing. Choco chips, sprinkles, chocolate curls, shavings, and now marshmallows..they all are just so helpful. 












Though I've many chocolate cake recipes in my blog and in my folders, yet every time I try a new one to taste the difference. Until I reach my favorite one....which is just an excuse to dig into another one. This one is from Piece of Cake by Camilla V Saulsbury via  Cooking and me. Its a very straightforward and easy recipe with basic ingredients, which takes no time to whip. Thanks Nags for sharing another great recipe.





Chocolate Fudge Cake Recipe


Gives one 8"/ 9" cake





Ingredients:


1/2 cup semi-sweet chocolate (chips or small chunks)
6 tbsp unsalted butter, (Soft and cut into cubes)
1 tsp instant coffee powder (optional but recommended)
1 1/4 cup all purpose flour 
3/4 cup sugar 
1/2 tsp baking soda 
1/4 tsp salt 
2 large eggs (Room temp)
3/4 cup milk 
1 tsp vanilla extract


Pinch of salt







 Method:




  1. Pre heat oven at 350F. Butter and flour an 8"/9" cake pan. I also prefer to line with parchment for easy removal of cake.

  2. Melt chocolate chips/chunks with butter either in microwave or in double boiler. Keeps aside to cool.

  3. In another bowl, whisk together flour, salt, baking powder, baking soda and coffee.

  4. Once chocolate mixture cools, add eggs and vanilla and whisk till combined. Now add the dry mixture slowly and with a hand whisk or electric mixture, mix it on low speed, scraping the sides and bottom, till combined. Don't overbeat.

  5. Now pour the batter in the prepared pan. Tap to even and remove bubbles. Bake for 25-30 mins, or till toothpick comes clean from the centre of the cake.

  6. Remove from over and let it cool for 10-15 mins, before removing from the pan.

  7. Cool well for about an hour or chill in fridge before decorating with frosting or ganache.
