What's in your picnic basket - Egg Mustard Mayo Wrap
As I try to type this, I draw a blank...after all before I even get to wish you guys "Happy New Year", we are already 3 days into it. Is time flying so past or am I living in some trance..Yes last I remember sharing with you all about the arrival of my baby gal. And now in another week she would be all of six months. Time surely flies!!
HAPPY NEW YEAR - "Go ahead and make it memorable and tasty"
In this last few months, I'm guilty of disappearing more than I met you all over here. Guilty of not sharing some tasty treats with you all, of not wishing you on the festive occasions, of not visiting your blogs and of so much more. But then I trust you all to understand the life of a mom of a newborn. Add a hyper kid in the picture and you have the perfect recipe of a forever busy mom....lol
A time when you learn the value of unhindered sleep, a time when you learn what a quick shower or power nap really means. A time when you really get to know the word multitasking, a time when you eat while feeding the baby or watch movies with 100 breaks....I can simply go on and on...but then it all becomes so trivial when you see a face so innocent, a smile so precious and an expression so priceless..that you just want the time to stand still...alas life betrays and that moment goes and your baby grows. So I'm trying to live every moment of my baby's life to the fullest...
So when during these crazy days, The Gourmet Seven group plans for a picnic themed post, then I just jump in. After all this is the time of the year in Bahrain when we get to enjoy the outdoors. When we try to soak the sunshine, breathe the fresh chilly air and enjoy all the perks of an outdoor life...since its so rare and precious in this part of the world. So here was my doll out in the park for her first picnic.
The theme of the month entailed us to pick recipes from BBC Good Food and I thought of trying my hand at roulade...but then as it would be, we decided on a spontaneous note to go out and so the busy mama packed a quick and tasty egg wrap. The recipe was based from BBC Good Food itself, since I wanted to try mustard mayo (yes never tried that combination) and just tweaked it slightly by wrapping it in green roll. I mean "methi paratha" or wholegrain flatbread with fenugreek leaves. Yes it added a new flavor to the wrap and of course the color matched the greenery around.
Egg Mustad Mayo Wrap in Fenugreek Flatbread
(Wraps and sandwiches are the most easy to customize...you choose your favourite ingredients, your choice of greens, dressing and bread of your liking and then simply dig in. So this is the way I made my tasty filling roll.)
Methi Paratha - 2/ Whole grain tortilla - 2 (lightly warmed)
Hard Boiled Eggs - 2 (sliced)
Onion - 1 small chopped
Mustard Sauce - 2 tsp
Mayonnaise - 2 -3 tbsp
Salt & Pepper
Chilly flakes - 1/2 tsp/ Green chillies - 1 (chopped)
Lettuce - a handful
Coriander leaves - 2 tbsp (chopped)
Chaaat Masala - 1/2 tsp (optional)
Now simply assemble your wrap:
1. Mix mustard sauce and mayo. Add salt and pepper to it and half the chopped onion.
2. Spread it generously on your choice of tortilla. layer with lettuce, egg slices, chopped onion, green chilly/ chilly flakes.
3. Sprinkle chaat masala and chopped coriander leaves. Roll and cut it in two.
4. Wrap in foil and pack in your picnic basket.
5. Soak the sun and enjoy this easy treat
